Salametti, apple & provolone sandwiches

INGREDIENTS

  • 125 ml (1/2 cup) mayonnaise
  • 30 ml (2 tbsp.) fresh dill, minced
  • 20 ml (4 tsp.) lemon juice, divided
  • Salt and freshly ground pepper
  • 500 ml (2 cups) arugula
  • 10 ml (2 tsp.) olive oil
  • 4 small sandwich buns of choice (ciabatta, baguette, Kaiser, etc.)
  • 1 green apple, thinly sliced
  • 8 slices of Provolone
  • 1 Dry chorizo salamettis, thinly sliced

PREPARATION

  1. In a bowl, combine mayonnaise, dill, and 15 ml (1 tbsp.) lemon juice. Season with pepper and set aside.
  2. In a bowl, toss the arugula with 5 ml (1 tsp.) lemon juice and 10 ml (2 tsp.) olive oil. Season with salt and pepper and set aside.
  3. Cut the buns in half on the horizontal and spread with dill mayonnaise. Add sliced apples, Provolone, and salametti. Top with arugula and close sandwich. Serve immediately.
