Energy balls with chick peas, lemon and dry chorizo

Perfect as a savoury snack, these chorizo energy balls take less than 10 minutes to prepare.

INGREDIENTS

  • 1/3 cup (80 ml) Fantino & Mondello Diced Chorizo Dry Sausage
  • 1/3 cup (80 ml) canned chick peas, rinsed and drained
  • 1 cup (250 ml) quick oats
  • ½ cup (125 ml) hummus
  • 1/2 cup (125 ml) roasted pumpkin seeds
  • Pinch ground cayenne pepper
  • 1/2 tsp (2.5 ml) cumin
  • Zest and juice from one lemon
  • Salt and pepper, to taste

PREPARATION

  1. In a bowl, use a fork to crush the chick peas.
  2. Add the rest of the ingredients and mix well. Taste, and adjust the seasoning.
  3. Roll 12 balls using your hands. Refrigerate in a sealed container.

Can be stored for up to 4 days in the refrigerator and one month in the freezer.
