Frittata with Original Diced Pancetta

  • 1 bag 175 g (1 cup) Diced Original Cooked Pancetta
  • ½ a red pepper, diced
  • 45 g / 3 tbsp. green onion, chopped
  • 6 eggs
  • 100 ml milk
  • 100 g mozzarella cheese, grated
  • 15 ml / 1 tbsp. olive oil
  • Salt and pepper (to taste)


  1. Sauté the diced cooked pancetta in olive oil until it darkens slightly. Set aside.
  2. Sauté the green onion and red pepper in the same frying pan.
  3. Beat the eggs together and add the milk.
  4. Pour the liquid mixture over the vegetables in the frying pan. Simmer gently, and sprinkle with the grilled pancetta.
  5. Add salt, pepper, and cheese.
  6. Cook on medium heat until done. Cover the pan to cook more evenly


To enjoy this breakfast recipe for lunch or dinner, add 120 g of smoked or cooked salmon at the same time as the pancetta. Yum!
