Maple ham with pineapple and diced Pancetta

The sweet and sour tang of this pineapple and maple mixture is simply delightful – the pancetta and ham textures bring the fun!

INGREDIENTS

  • 175 g (1 package) Fantino&Mondello diced Pancetta Original
  • 2 tbsp butter (salted or unsalted)
  • 2 tbsp vegetable oil
  • 4 to 6 slices smoked ham, around ½ inch thick
  • 4 to 6 slices fresh pineapple
  • ½ cup maple syrup
  • 1 tsp fresh ginger
  • ½ cup pineapple juice or pulp-free orange juice

PREPARATION

  1. In a large skillet, gently brown the ham and diced Pancetta in the vegetable oil and half the butter at the same time until slightly golden. Set aside on a plate.
  2. In the same skillet, add the rest of the butter and brown the pineapple slices so they are golden on both sides. Add the maple syrup, fruit juice and ginger. Simmer gently. Remove the pineapple slices and place them on the ham slices.
  3. Add the diced Pancetta in maple syrup and ginger, and simmer until the desired consistency is reached, or simply add a little butter to bind the sauce.

This recipe’s sweet & sour cachet, especially that of the pineapple mixture, is simply delightful. You’ll also really enjoy the textures of the Pancetta, pineapple and ham.

TIPS

This recipe can be prepared in advance: Arrange the ham and pineapple slices on an oven-proof platter, add the sauce and sprinkle the diced Pancetta on top. At serving time, heat covered in the oven at 300 °F for approximately 30 minutes.
