Pizza-style energy balls with spicy dry pepperoni

INGREDIENTS

  • 1/2 cup (125 ml) Fantino & Mondello Sliced Spicy Dry Pepperoni, cut into small pieces
  • 1/2 cup (125 ml) roasted almonds
  • 1 cup (500 ml) chick peas, rinsed and drained
  • 2 tbsp (30 ml) quick oats
  • 3 tbsp (45 ml) pizza sauce
  • 1 tbsp (15 ml) nutritional yeast (for its cheesy flavour!)
  • Pinch dried basil
  • Pinch dried oregano
  • Salt and pepper, to taste

PREPARATION

  1. Using a food processor, reduce the almonds, chick peas, quick oats and pizza sauce into a smooth puree. Transfer to a bowl.
  2. Add the dry spicy pepperoni pieces, nutritional yeast, basil and oregano. Season with salt and pepper and stir well. Taste, and adjust the seasoning.
  3. Roll 12 balls using your hands. Refrigerate in a sealed container.

Can be stored for up to 4 days in the refrigerator and one month in the freezer.
