Assemble the brochettes in the following order: one slice of Salametti, one shrimp, and one slice of fennel. Repeat until each brochette contains 4 slices of Salametti, 4 shrimp and 4 slices of fennel. Use a pastry brush to glaze the brochettes with honey.
Cooking on the BBQ: Cook the brochettes over medium-high heat for 1 to 2 minutes on one side and for around 1 minute on the other side (or until the shrimp are cooked). Remove from heat. Sprinkle the brochettes with lime juice and garnish with fresh basil (optional). Serve immediately!
